New pâtisserie café from Japan just opened at Hotel Nikko, Thonglor. シェシバタ (Chez Shibata) specializes in classic French pastry with Japanese craftsmanship and technique.
ゆずタルト (Yuzu Tart) is one of their signature desserts, it’s yuzu cream filled with cream cheese filling, and yuzu skin, topped with chocolate spray and yuzu jelly.
抹茶レイヤーケーキ (Matcha Opera), a layer cake which each layer filled with different types of ingredient; Matcha ganache, dark chocolate ganache, Mandarin orange jelly, and Matcha sponge cake. Mandarin orange jelly layer makes the entire piece taste wonderful.
ミルフィーユ (Mille-feuille) from Chez Shibata is a different take on the traditional French pastry. Although I much prefer traditional three layers of pâte feuilletée with two layers of cream, I also like this version with additional flavor from fresh strawberry and blueberry.
